Groucho's Potato Salad
(This is my "replication" of my most favorite potato salad that was
at one time THE house recipe for potato salad at Grocho's Delicatessen
in Columbia, SC. Groucho's was in Five Points a few blocks from the
University of South Carolina, and it was a favorite place for students
and business people. After Groucho died, his son continued to make
this potato salad; however when he died at a relatively young age
a few years ago, Groucho's grandson changed the potato salad recipe.
I then began to try to replicate the recipe while I could still
remember how it used to taste.)
- 1 lb. potatoes
- 1/2 teaspoon salt
- 2 boiled eggs, grated
- 3 sticks celery, chopped
- 1 teaspoon balsamic vinegar
- 1 teaspoon sugar
- 1/4 cup mayonnaise
- 1/4 cup Durkee's dressing (Dijon mustard may be substituted)
- 2 ounces of pimentoes with some of the oil
- 1 tablespoon dill
- 1/4 teaspoon salt
- 1/2 teaspoon coarse pepper
- 1/4 teaspoon celery salt
Boil the potatoes with the salt for twenty minutes from a cold
water start. Drain and let cool.
Add the grated eggs and the chopped celery.
Mix together the dressing:
Dissolve the sugar in the balsamic vinegar.
Add to the mayonnaise, Durkee's (or Dijon mustard) dressing,
pimentoes, dill, salt, pepper, and celery seed.
Gently mix the dressing with the boiled potatoes, eggs, and celery.
Chill and serve.
